Why have i not made pita before? It’s so quick.
I let 1 T. yeast froth in 1 1/4 cup warm water. Added 3 cups flour (2 white, 1 whole wheat) and a sprinkle of salt. Kneaded it for 5 minutes, then divided the dough into ten balls. After each was rolled into a 6 inch circle, i left them to rest for half an hour. After which, once the oven was 500 degrees, i flipped them over onto a baking sheet, put them on the lowest rack, and wait 5 minutes while they puff up like pillows. Eily and some neighbours and i watched this part in awe, with the oven door slightly open and the heat bursting out.
We ate them with this dip but also, rather sacrilegiously, stuffed with sausages and sauerkraut.
