Badly made

Malfatti, Italian dumplings of spinach and ricotta, which translate as “badly made”….exactly what i was up for today: no pressure and 20 minutes to make dinner. They were good but the sauce was the best: red peppers, carmelized onions, pesto, preserved lemons and greenhouse tomatoes.

    This sounds great! I just read in “Earth to Table” about a pasta that is similar but probably much more work, called gnudi. So I may start with a version like yours!
